It's really not that hard - I just enabled it within 5 minutes.

Open iChat.
Once open, click on the "iChat" menu item at the top-left of the screen (next to the Mac "Apple" logo). 
Highlight and click on "iChat > Preferences." 
Once you have your iChat Preferences window opened, select the "Accounts" tab.
At the bottom left of the "Accounts" tab, click on the square "+" (add) button to add a new account.
In
the sub-window that will open, scroll to "Account Type" and click the
up/down arrow and select "Jabber Account" (don't worry, you don't have
to create any new accounts - this is just the process).

Now, once you have "Jabber Account" selected, the screen should ask you for the following:
   "Jabber ID:
   Password:
   Server:
   Description:"
Insert the following information:
  
"Jabber ID: [your gtalk or gmail username, followed by "@gmail.com".
(if my gtalk username is "david", i would put "[email protected]")]

   Password: [your gmail/gtalk password]

   Server: talk.google.com (make sure you enter this correctly)

   Description: Google Talk
